Ingredient List
- 1 box Betty Crocker™ American Style Pancake Mix
- 625ml milk
- Butter, for greasing
For decoration
- 1/2 small banana, peeled
- Fresh strawberries
- Fresh blueberries
For serving (optional)
- Maple syrup or runny honey
Preparation
- Make up the pancake mix as directed on the box with the milk.
- Heat a large non-stick frying pan or pancake pan over a medium heat. Lightly grease with a little of the butter.
- Drop 4 large tablespoonfuls of the batter onto the pan. Cook for about 11/2 minutes or until bubbles appear on the surface. Flip each pancake over and cook for another minute or until golden brown.
- Remove the pancakes from the pan and keep warm (see Tips). Repeat with more of the batter to make another 8 large pancakes, greasing the pan with more butter as needed.
- Cook the remaining batter in the same way only this time drop teaspoonfuls of the batter to make about 52 mini pancakes in total. Cook for 1 minute then flip and cook for a further 30-40 seconds. Don’t worry if some of the mini pancakes vary in size.
- Once all the pancakes are cooked it’s time to have fun making animal faces and shape.
- Pig pancakes: top a large pancake with a small pancake for the snout. Halve one small pancake and position as ears. Add halved blueberries for eyes and nostrils (make 4).
- Cat pancakes: top a large pancake with halved blueberries for the eyes, sliced strawberries for the ears and nose and thin slices of banana for whiskers (make 4).
- Teddy bear pancakes: top a large pancake with a small pancake for the nose. Position 2 small pancakes for the ears. Add slices of banana and halved blueberries for the eyes and half a blueberry for the end of the nose (make 4).
- Caterpillar pancakes: line up eight small pancakes in a wavy shape to resemble a caterpillars’ body. Add halved blueberries for feet and eyes and thin slices of strawberry for the mouth and antennae (make 4).
- Serve the pancake animals drizzled with maple syrup or runny honey, if you like.
Tips
- Keep the cooked pancakes warm in a low oven or covered with a clean tea towel. Store any leftovers in an airtight container in the fridge for 1-2 days then simply reheat in the microwave for a few seconds.
- Use chocolate chips or sultanas instead of the blueberries or pipe animal features onto the pancakes using small tubes of chocolate or coloured icing.
