The first thing to be aware of, is that you need the right piping tips, as they will allow you shape the petals correctly on your first go. We recommend getting hold of straight tear drop tips for the flowers, and jagged nozzles for creating leaves – great for covering up mistakes!
- Colour your icing. Your petals can be any colour you wish, but we recommend you make green icing for the leaves.
- You will need two types of petal icing, one of softer piping consistency, and one thickened with extra sugar to create a stable base.
- Fill your piping bags. You should have at least two, one for the leaves, and one for the petals (though you can fill a few bags with different icing colours). Leave the thicker base icing in a bowl.
- Take a small section of the thicker icing and on a piece of baking paper make a small mound.
- Take your petal piping bag with a straight tip and make a centre spiral, then add some overlapping arcs, building them until you start to see a rose shape emerge.
- Use scissors to cut the piped flower from the mound when it has set and place it on your cake. Then use the leaf-shaping tips and green icing piping bag to add some detailing on the finished cake.
