
Carrot Gem Brownies

Easter bunnies and kids alike will love to tuck into these novelty brownies. They are simply cut into triangles and decorated to look like crunchy carrots! Plus, just a few of them have the added surprise of a sweet treat hidden inside – will you be extra lucky?
Ingredient List
- 40ml vegetable oil, plus extra for greasing
- 1 box Betty Crocker™ Chocolate Fudge Brownie Mix
- 1 medium egg
- 75ml water
For the decoration
- 3 mini orange jelly beans
- Orange food colouring paste or gel
- 175g Betty Crocker™ Vanilla Buttercream Style Icing
- Green chewy candy sticks, cut into 3cm strips and halved lengthways (see Tips)
- Mini chocolate bunnies to decorate (optional)
Preparation
- Preheat the oven to 180°C (160°C for fan assisted oven)/Gas Mark 4. Grease a 20cm round loose-based shallow cake tin and line the base with baking paper.
- Make up the brownie mix as directed on the box with the oil, egg and water. Spread the mixture evenly in the prepared tin.
- Bake for 20-25 minutes or until a round bladed knife inserted 5cm from the edge of the tin comes out clean. Leave in the tin for 10 minutes, then carefully remove the brownie from the tin and transfer to a wire rack. Leave to cool completely (about 30 minutes).
- Place the brownie on a board and chill in the freezer for 30 minutes. Remove the lining paper and cut into 12 even-sized triangles (see Tips). Push 1 jelly bean into each of 3 brownie triangles.
- Use the orange food colouring paste or gel to colour the icing. Spoon into a disposable piping bag. Snip off the end of the piping bag to give a 3-4mm wide hole and pipe over the top of each brownie in a zig-zag pattern. Add 2-3 green candy strips to the straight end of each brownie to resemble carrot tops. Bring to the table decorated with chocolate bunnies, if you like.
Tips
- Freezing the brownie for a short while will make it easier to cut with less crumbs. For even-sized triangles, make a 20cm round template of baking paper, cut in half, then cut the half into a quarter, and finally cut the quarter into thirds to use as a guide when slicing.
- Any green-coloured candies will work for the carrot tops, but if you prefer, simply colour 25g of vanilla icing green with paste or gel. Spoon into a piping bag fitted with a writing nozzle and pipe a few wavy lines onto each brownie.
- Store the brownies in an airtight container in a cool place for 3-4 days.
