Ingredient List
- 40ml vegetable oil, plus extra for greasing
- 1 box Betty Crocker™ Chocolate Fudge Brownie Mix
- 1 medium egg
- 75ml water
For the decoration
- 200g Betty Crocker™ Vanilla Buttercream Style Icing
- 25g Betty Crocker™ Indulgent Chocolate Fudge Icing
- 35g brightly coloured sugar-coated chocolate beans (see Tips)
Preparation
- Preheat the oven to 180°C (160°C for fan assisted ovens)/Gas Mark 4. Grease a 20cm square shallow cake tin and line the base and sides with baking paper.
- Make up the brownie mix as directed on the box with the oil, egg and water. Spread the mixture evenly in the prepared tin.
- Bake for 25-30 minutes or until a round bladed knife inserted 5cm from the edge of the tin comes out clean. Leave in the tin for 15 minutes, then lift out of the tin using the lining paper and transfer to a wire rack to cool completely (about 45 minutes).
- Remove the lining paper from the brownie slab and place upside down on a board (see Tips). Use a small palette knife to spread the vanilla buttercream icing evenly over the top.
- Spoon the chocolate fudge icing into a small paper or disposable piping bag fitted with a fine writing tip or nozzle (or just snip off the tip of the piping bag to create a small hole). Pipe a continuous swirly line to resemble fairy lights wire. Add the sugar-coated chocolate beans at intervals along the ‘wire’ to resemble fairy lights. Cut into 16 squares.
Tips
- Flipping the cold brownie slab over to decorate will ensure that you have a smooth, crumb-free surface for icing.
- You can use any small colourful sweets for the fairy lights, such as mini jelly beans.
- Store the brownies in an airtight container in a cool place for 3-4 days.
